Ingredients:
- Fresh Prawns: 500g, cleaned and deveined
- Mustard Oil: 1/2 cup
- Vinegar: 1/4 cup
- Garlic: 8-10 cloves, minced
- Ginger: 1-inch piece, minced
- Green Chilies: 4-5, chopped
- Curry Leaves: a handful
- Mustard Seeds: 1 tsp
- Fenugreek Seeds: 1/2 tsp
- Turmeric Powder: 1/2 tsp
- Red Chili Powder: 2-3 tsp
- Salt: to taste
Method:
- Heat mustard oil in a pan and fry the prawns until they turn pink. Remove and set aside.
- In the same pan, add mustard seeds and fenugreek seeds. Once they splutter, add minced garlic, ginger, green chilies, and curry leaves. Saute until aromatic.
- Add turmeric powder and red chili powder. Cook for a minute.
- Stir in vinegar and salt. Cook for another minute.
- Add the fried prawns to the mixture and toss until well-coated.
- Remove from heat and let it cool to room temperature.
- Transfer the prawn pickle to a sterilized jar and store in a cool, dry place for at least a day before consuming.
