Let's make Andhra style Prawn pickle!

Andhra-style prawn pickle is a delicious and spicy dish that combines the flavors of prawns with a tangy and aromatic pickle masala. Here's a basic recipe to make Andhra-style prawn pickle:

Ingredients:

  • 500 grams of medium-sized prawns, cleaned and deveined
  • 4 tablespoons of mustard oil (you can use any cooking oil, but mustard oil adds an authentic flavor)
  • 1 teaspoon of mustard seeds
  • 1 teaspoon of fenugreek seeds
  • 1 teaspoon of cumin seeds
  • 1 teaspoon of turmeric powder
  • 2 tablespoons of red chili powder (adjust according to your spice preference)
  • 2 tablespoons of ginger-garlic paste
  • 10-12 curry leaves
  • 2 tablespoons of tamarind paste
  • Salt to taste
  • 1 tablespoon of jaggery or sugar (optional)
  • Fresh coriander leaves for garnish

Instructions:

  1. Prepare the prawns: Wash the prawns thoroughly and pat them dry with a paper towel. If the prawns are large, you can cut them into smaller pieces.

  2. Marinate the prawns: In a bowl, mix the prawns with turmeric powder, red chili powder, ginger-garlic paste, and salt. Let it marinate for at least 30 minutes.

  3. Prepare the pickle masala: Heat mustard oil in a pan. Once the oil is hot, add mustard seeds, fenugreek seeds, and cumin seeds. Let them splutter.

  4. Add curry leaves: Add curry leaves to the pan and sauté for a few seconds until they release their aroma.

  5. Add prawns: Add the marinated prawns to the pan and fry them on medium heat until they are cooked through. This should take about 5-7 minutes.

  6. Add tamarind paste: Once the prawns are cooked, add tamarind paste to the pan and mix well. Cook for another 2-3 minutes.

  7. Adjust seasoning: Taste the pickle and adjust the seasoning according to your taste. If you prefer a bit of sweetness, you can add jaggery or sugar at this stage.

  8. Cool and store: Let the prawn pickle cool down to room temperature. Transfer it to a clean, airtight jar and store it in the refrigerator.

  9. Serve: Serve Andhra-style prawn pickle as a side dish with rice or roti. Garnish with fresh coriander leaves before serving.
