How Small Prawns Make the Best Prawn Pickle?

When it comes to making a delicious prawn pickle, the size of the prawns you use can make a big difference in the end result. While large, jumbo-sized prawns may seem like an appealing choice, I would argue that smaller prawns actually make for a tastier and more flavorful prawn pickle.

The key reason is that smaller prawns have a higher ratio of surface area to volume compared to larger prawns. This means that more of the prawn's exterior is exposed to the pickling liquid, allowing it to absorb more of the spices, herbs, and acids that give prawn pickle its signature bold flavor.

Larger prawns, on the other hand, have a lower surface area to volume ratio. The centers of the larger prawns don't get as thoroughly infused with the pickling flavors, leaving you with a less uniform taste throughout each piece.

Smaller prawns also tend to have a more tender and delicate texture when pickled. The pickling process can sometimes make larger, tougher prawns rubbery or stringy, but the smaller size of baby or medium-sized prawns allows them to retain a pleasant chewiness and juiciness.

Additionally, using small prawns allows you to pack more of them into a jar or container, resulting in a more intense prawn flavor in every bite. Large prawns take up more space, limiting how many you can fit.

Of course, the specific size you choose also depends on personal preference and the intended use of the prawn pickle. Smaller sizes work great for snacking, topping dishes, or adding to chutneys and relishes. Larger prawns may be preferable if you want more substantial pieces to feature in a main course.

But if maximum flavor is your goal, I'd recommend sticking to petite or medium-sized prawns for the best tasting prawn pickle. The extra surface area and tender texture will have your taste buds dancing with delight.
